What is CMC & GMS

Ingredients

  • Full fat milk: Full-fat milk adds a rich, creamy flavor to ice cream. The fat in milk helps make the texture smooth, creamy, and creates a base that is pure indulgence.
  • Sugar: Sugar is added for sweetness and also helps keep the ice cream soft and not icy. Without sugar, ice cream will freeze too hard and be icy.

  • Cornstarch : Cornstarch is added to slightly thicken the ice cream and also prevent ice crystals from forming.
  • Vanilla Extract: Vanilla essence is the main flavor of this recipe. Use a good quality vanilla bean or vanilla essence as it provides the classic flavor, taste and aroma.

Step by Step Images

1)Take cms, gram, milk powder, cornstarch in a bowl.

2)add ¼ cup milk to it and make a smooth paste. Set aside.

Make pudding

3) Take sugar in a sauce pan. I use granulated sugar.

4)pour milk over sugar. Now turn on the heat and bring to a boil.

5)Now pour in the cornstarch mixture and use a whisk to mix it well.

6)Now continue to stir and cook until it boils. It will thicken a lot. Now turn off the heat once it boils completely.

7)Now turn off the heat and add vanilla extract. Mix this very well. Set aside until completely cool.

8)Once the mixture has cooled, strain the mixture through a sieve and pour into a shallow container.

9) Place in the freezer and freeze for 3 to 4 hours.

10)Now the dough is half frozen.

11) Pour into a blender.

12)Add fresh cream to this mixture. Blend this for 1 minute to break up all the ice crystals and make extra soft ice cream.

13)Now the mixture looks thick and creamy.

14) Pour this into a shallow container to freeze. Store in the freezer for another 3 to 4 hours. Repeat this mixing one more time to get super thick ice cream.

15)Once the second mixing is complete, return it to the freezer overnight. This is what it looks like after freezing.

16) Take and serve. Look how thick it looks.
