- green sauce: Green chutney is used as a spread to make the sandwiches slightly spicy and adds a fresh taste to the filling. This balances the overall taste and gives a desi sandwich taste to the uthappam.

1)You can follow this recipe to make green chutney.

2) Take the dosa batter to make uthappam.

3) Heat the tawa, pour a spoonful of the mixture.

3) Apples a little butter and green chutney.

4) Spread evenly so that the butter and green chutney are on top of the dosa.

5)Sprinkle onions, tomatoes, capsicum over the dosa.

6) Sprinkle the top with pav bhaji masala.

7) Sprinkle some of the dosa batter on top.

8) Cover the dosa with the dosa mixture. sprinkle with more butter.

9) Flip and cook.

10) Cook both sides until golden brown.

11) Serve.

- Make sure the mixture is thick and slightly sour. This helps the uthappam maintain its shape well and prevents it from breaking when the filling is put in.
- Always cook on medium heat so that the uthappam cooks evenly on the inside and crisps on the outside without burning.
- Once the filling is added, press it down a little using a spatula. This helps the topping stick to the uthappam base properly.
- Don’t overfill, otherwise it will be difficult to turn over.
