1) Gather all the ingredients. Finely chop the onions and green chilies. Heat oil for tempering and for cooking paniyaram.

Now let’s mix the sooji for paniyaram batter. Take rava or sooji in a bowl.

2) Add yogurt. I use plain yogurt.

3) Mix well. The dough must be thick,

4)Add water to get the correct consistency.

5) Add a pinch of salt.

6)Mix and let sit for 10 to 15 minutes.

7)Now let’s make tempering for paniyaram.

8) Heat oil in a frying pan.

10)Add mustard and urad dal.

11) Let it turn golden brown.

12) Add the onions, chilies and curry leaves.

13) Saute for 1 minute.

14)Add baking soda to the paniyaram mixture just before cooking. Apart from baking soda, you can also use eno salt.

15) Stir the mixture until smooth, it will foam.

16)Add tempering to the paniyaram mixture.

17) Mix well.

18) This is how thick the batter should be.

19)Heat a kuzhi paniyaram pan with some oil or ghee for cooking.

20) Spoon the paniyaram mixture into the pan.

21) Let it cook for a few minutes.

22) Once the base is golden, remove from the pan.

23) Flip and cook.

24) Let it cook for a few more minutes.

25) Paniyaram completed.

26) Transfer to a serving plate and enjoy.

27) Serve.
