Yachaejeon literally means vegetable pancake. Yachae means vegetables and jeon means pancakes.

- Water: Water is used to make a smooth dough and adjust the amount according to the desired consistency.
- Salt : Salt is an important seasoning used to enhance the taste and flavor of pancakes.
- Oil : Oil is used for cooking pancakes, use any neutral oil such as canola oil, vegetable oil, or sunflower oil.

Dipping Sauce
1) Start by making the dipping sauce for the pancakes. I made a simple dipping sauce using soy sauce, vinegar, garlic, scallions, sesame seeds, and sugar.

2) Mix all ingredients in a bowl. Taste and adjust the ingredients to your liking.

Prepare Vegetables
3) Take all your vegetables. Cut into thin julienne. I used cabbage, zucchini, bell peppers, green chilies, carrots. Slicing vegetables thinly is important. Set this aside in a bowl.

Make the dough
4) Now let’s make the dough in a separate bowl. Take wheat flour, rice flour, salt in a bowl.

5) Pour water to make a smooth dough.

6) The dough should not be too thick. Adjust the water.

Making Pancakes
7)Now to make pancakes. You should not add the dill to all the vegetables, as they will lose a lot of water as they sit. So mix the batter into a serving of vegetables to make one pancake at a time.
Take about 2 cups of vegetable mixture in a separate bowl.

8) Pour a spoonful of mixture into the vegetable mixture.

9) There should be a lot of vegetables for the dough. Coat the vegetables with the mixture.

Cooking Pancakes
10) Heat a non-stick frying pan. Pour oil into the pan and let it heat. Now pour all the batter coated vegetables into the hot oil.

11)Spread it evenly and let it cook on medium heat. This will take approximately 12 to 15 minutes. The pancakes will be crispy on the bottom.

12)Once the pancakes are very crispy on the bottom, flip them over and cook for another 12 to 15 minutes. Drizzle more oil around the sides as needed.

13) Leave until crispy and golden brown.

14) Transfer the pancakes to a plate and cut into small squares.

15) Serve with soy sauce.

Expert Tips
- Pour the mixture into a frying pan heated with oil. Cook until the edges are nice and crispy. Then carefully flip and fry the other side until golden brown.
- To make it crispier, use a little cornstarch in the dough.
- If the mixture is too thick or uneven, mix in a little water to get the desired consistency.
- Spread the vegetable filling evenly over the pan and don’t overcrowd it.
- To get the authentic Korean taste, add a spoonful of gochujang paste to the mixture. It adds a spicy and tangy touch to the pancakes.
