This simple 5-ingredient recipe relies on shredded chicken, corn tortillas, Monterey Jack cheese, Hatch chiles, and a bright red enchilada sauce that does double duty – flavoring the filling and smothering the top for a cooked, bubbly finish.

Similar to my favorite method for Crockpot Mexican Shredded Chicken, letting the meat simmer low and slow will allow the meat to absorb the sauce as it cooks. Once it’s soft enough to pull apart with two forks, it’s perfectly seasoned and ready to put in your tortilla. This is a shortcut that guarantees a flavorful bite every time.

Rotisserie Chicken Shortcuts

If you’re short on time, or don’t have a slow cooker, using shredded rotisserie chicken is your best alternative. It’s fully cooked and seasoned, meaning you just need to toss it with a little red sauce and chili before rolling it up. This cuts your prep time to less than ten minutes.

As a bonus, this juicy shredded chicken and chili filling is super versatile. If you have extra, it also tastes great tucked into a crunchy taco or wrapped in a burrito.

Vegetarian Options

If you want to skip the meat, you can easily make it vegetarian by swapping the shredded chicken for a can of black beans or pinto beans. Just toss your beans with warm red sauce and chili, roll them in cheese, and bake as usual.

Glass Bowl Air Fryer Method

I also tested this recipe in my glass bowl air fryer. This really makes the final cooking process quick and easy. Unlike traditional air fryers, you can actually watch your food cook. Plus, the basket doesn’t need to be covered in foil. Simply assemble your enchiladas directly in a bowl, top with the remaining red sauce and cheese. Air fry at 375°F/190°C for about 8 to 10 minutes until the cheese melts.

Flour Tortillas vs Corn Tortillas

Although traditional enchiladas call for corn, you can easily replace it with flour tortillas. If that’s what you have or like. Flour tortillas roll beautifully without tearing and become incredibly soft and tender when baked with sauce. If using flour, just keep it in the oven and air fryer for the last few minutes. The exposed edges of the flour will brown more quickly than the corn.

Prevent Cracked Corn Tortillas

There’s nothing more frustrating than a corn tortilla that splits when you roll it. Because corn tortillas lack gluten, they require a little warmth to stay pliable.

For this recipe, I used the warm enchilada sauce method. Make sure your red sauce is warm enough before you start assembling. Dipping each corn tortilla in the warm sauce will soften them instantly. Acts as a quick soak that makes tortillas flexible and rollable without the need for additional oil or a stove.

Serving Suggestions

To turn this easy comfort food into a complete Southwestern feast, pair it with fresh, cool toppings to balance the heat of the chili. A dollop of sour cream, sliced ​​avocado, or a dollop of cold Guacamole works great. For extra crunch, serve with Sweet Corn Salad (Esquites).

Storing Leftovers

If you happen to have leftover enchiladas, they make a great lunch the next day (and they taste even better, too!).

  • In the Refrigerator: Place the cooled enchiladas into an airtight container. Store up to 3 to 4 days.
  • Reheat: To maintain the perfect fried texture, place them back in the air fryer. 350°F for 4 to 5 minutes until cooked through and the cheese is bubbly again. You can also put it in the microwave for 1 to 2 minutes if you are in a hurry.

Hatch Green Chile Chicken Enchiladas

Easy Hatch green chile chicken enchiladas combine slow-cooked shredded chicken with authentic New Mexico chiles, rolled into a warm tortilla and smothered in creamy red sauce and melted cheese. A Southwestern favorite that can be baked traditionally in the oven or cooked quickly in the glass bowl of an air fryer.

Slow Cook Chicken:

  • Heat your slow cooker over low heat. Pour an even layer of red enchilada sauce over the bottom (reserve enough sauce for the rest of the recipe). Add the chicken breasts and toss to coat both sides. They don’t have to be submerged. Cover and cook over low heat for 3 hours, or until the chicken shreds easily with a fork.

Gather:

  • Dip corn tortillas in remaining warm enchilada sauce to coat both sides. Lie on the board. Place a large spoonful of the chicken mixture along the side closest to you, top with a sprinkle of cheese, and roll up tightly. Place the tortillas seam side down in your prepared baking dish. Repeat with the remaining tortillas, fitting them neatly into the dish.

Sauce, Cheese, and Bake:

  • Pour remaining enchilada sauce evenly over rolled enchiladas and remaining cheese. Bake uncovered for about 30 minutes, or until sauce is bubbling and cheese is melted. Carefully remove from the oven, garnish with fresh chopped cilantro, and serve hot.

Air Fryer Method:

  • Using a glass bowl air fryer, arrange the enchiladas tightly in a glass bowl coated with a layer of sauce. You have to do this gradually. Top with remaining sauce and cheese, then air fry at 375°F (190°C) for 8 to 10 minutes until hot and bubbly.
