What is a Ginger Bug?
A ginger bug is a natural fermented culture made from fresh ginger, sugar, and water. Scientifically, it is a wild fermentation starter used to carbonate homemade juices and teas such as ginger ale, fruit soda, sweet tea.
How does it work?
Ginger bugs are a simple example of wild fermentation. Made from fresh ginger, sugar and water. If left for days, ginger will ferment by natural microorganisms on the skin and ginger environment.
Wild yeast and lactic acid bacteria (Lactobacillus) eat sugar, creating a microbial ecosystem. Yeast converts sugar into carbon dioxide and small amounts of alcohol, while bacteria produce lactic acid, which gives the mixture its tangy taste.
The same principle applies to other fermented recipes such as Sourdough, Kefir, and Kombucha. When added to sweet tea or sweet juice and sealed in a bottle, the active culture continues to ferment, trapping carbon dioxide and creating natural carbonation.

OK, now you have learned the science behind ginger aphids. Let me explain it in simple words. For making active ginger aphids. You need ginger with peel, sugar to feed the active microparticles that will form on the insects.
Mix the ginger, sugar and water, then cover with a cloth and set aside in a warm place. You keep adding sugar and ginger so that the micro particles that form on the insects don’t die.
If you keep doing this for a week. You get active ginger bugs that you can use to carbonate anything from fruit juice, sweet tea, beer, or anything else.

How to use ginger aphid?

The more you add, the faster it will ferment and will also affect the taste of the juice. So I recommend adding just a fifth of a cup for every 500 ml of fruit juice.
How do you keep ginger aphids alive?
Once you’ve made and used ginger ale, the next question is how to store it longer. Yes, you can save ginger aphids for future use without having to go through the entire manufacturing process over and over again.
OK, it will take you almost 5 to 7 days to make ginger bugs. This is your active starter jar. This is called the master jar.
If you remove ½ cup of ginger aphid from the parent jar. Add ½ cup water and top with 1 tablespoon ginger and 1 tablespoon sugar. Leave on the counter for 1 day. It will become active and bubble again. This way your big ginger remains active all the time.
If you don’t use the ginger aphid directly. Store in the refrigerator in the future.

Stay Safe with Carbonation at Home
Making your own soda at home is fun. But it can also be very dangerous. Always be careful when making it. Here are my safety tips.
- Use good quality glass bottles with flip top necks only. Do not use screw caps, as they may break.
- Use a small amount of ginger aphid to carbonate. Using too much can produce too much gas which can lead to over-fermentation.
- Leave 1 to 2 inches of headspace on the bottle. This gives CO₂ room to compress as pressure increases. Providing too little headroom will cause detonation.
- Store the bottle at room temperature just 1-2 daysdepending on warmth and sugar content.
- If you store the bottle for more than a day at room temperature. You should “burp” the bottle every day. Open the cap to allow the gas to escape and reduce the pressure on the bottle.
- Once it’s fizzy, store it in the refrigerator. This slows fermentation and prevents explosions.

Ingredients for Ginger Bug
- Ginger – Choose young ginger with thin skin. It ferments faster. But you can also use cooked ginger, as long as it is fresh. You need ginger skin, so don’t peel it. Rinse briefly to remove dirt and chop or grate. The reason is, there are more microbes on ginger skin.
- Sugar – You can use granulated sugar, brown sugar to make ginger bugs. I don’t recommend using honey because of that natural antimicrobialthat’s why it doesn’t break easily. This means it can slow down the process.
- Water – use room temperature water for best results.

Step by Step Images
Making Ginger Bugs
1) Scrub and wash the ginger well. There is no need to peel the ginger skin. Cut the ginger into fine pieces.
For the first day, you need 1 tablespoon of chopped ginger and 1 tablespoon of granulated sugar.

2) Take a glass jar. Add 1 glass of water to the jar. Add 1 tablespoon of chopped ginger.

3)Add 1 tablespoon of sugar. You can use white sugar or brown sugar.

4) Mix this very well.

5) Mix in a jar, cover with cloth. Leave it for one day.

6) The next day, chop 1 tablespoon of ginger. Now take the jar, open it and feed it with 1 tablespoon of ginger and 1 tablespoon of sugar. Mix well and cover again with muslin cloth. Set aside for 1 more day.

7) Repeat this for 6 to 7 days. You will see a lot of bubbles on it on day 5. That’s it, the active ginger aphid is ready.
Once the ginger bug is ready, you can close the bottle with a lid and store it in the refrigerator until ready to use.

Make Naturally Fermented Strawberry Soda
8) Take the ingredients for the soda. I made strawberry soda. So I used strawberries, sugar, lemon juice, water and ginger.

9) Take out your active ginger aphids. Strain through a sieve.

10) You need ⅛ cup of ginger aphids for every 500 ml of juice.

11)Take the berries in a blender. You can use any fruit you like.

12)Add sugar and lemon juice and water into the blender jug.

13) Blend until smooth. If you wish, you can filter this mixture.

14) Now take a flip top glass bottle. Pour the filtered ginger bug into a bottle.

15) Pour the strawberry juice through the funnel. Fill with juice to the top, leaving 2 inches of space at the top. Shake well and close the bottle. Cover and leave for 1 day.

16)After one day, store in the refrigerator for 10 hours or overnight. Once cool, carefully open and enjoy a cold, naturally fermented strawberry soda.

Building ginger bug – I recommend taking your time to build a powerful ginger bug. So just a little is enough to make your soda bubbly. Spend at least a week getting the ginger aphids strong and active.
Little benefit – don’t add too much ginger to your juice. This will make your drink too gingery. So start with ⅛ cup for every 500 ml of fruit juice.
Cooling is a must – Prevents excess carbonation, controls sour taste and extends shelf life.
