My daughter really liked the sweet corn and pasta. So I made the sauce using just sweet corn without adding any cream or milk. To make the pasta thick, I used boiled potatoes to create a thick texture and it worked.

About Corn Paste

Corn pasta also known as sweet corn pasta is a delicious creamy pasta made with just corn. You don’t need milk, cream, or béchamel sauce to create a creamy texture.

I use one secret ingredient that holds this sauce together without adding butter or cream. Try the mac and cheese & chicken alfredo.

Corn cream sauce is made with olive oil, garlic, lemon zest, sweet corn sautéed before grinding. To make the sauce extra creamy, I added some boiled potatoes which blended into the sauce to create the texture we wanted.

Remember, don’t add too many potatoes, or the sauce will become too thick and creamy. With the right amount of potatoes, you’ll get a creamy texture with intense corn flavor.

I like to use fresh sweet corn that I shuck myself. You can scrape out the seeds using a sharp knife. I like to place corn on the cob in the center of a bundt cake pan. Use a sharp knife to shuck the corn so the kernels are easy to remove.

If fresh sweet corn is not in season, you can use frozen corn. Also when adding potatoes, never add too much, as the sauce will become thick and you may need to thin it with more water.

Instead of potatoes, you can use carrots, butternut squash, sweet potatoes, or pumpkin.

  • Pasta – I used chickpea spaghetti for this recipe to make it healthier. You can use any pasta such as macaroni, penne, or fusilli. Whole wheat lentil pasta and gluten-free pasta can also be used.
  • Sweet corn – Fresh or frozen corn can be used.
  • potato – Just a little boiled potato is used to make the sauce. You can use boiled carrots, pumpkin or sweet potatoes.
  • Onion and garlic – Flavoring that gives a slight aroma to the sauce.
  • Olive oil – This pasta dish uses high quality olive oil, lighter than butter.
  • Herbs & Spices – chili flakes, Italian seasoning, salt used for seasoning.
  • Parmesan Cheese – add enough cheese, which adds umami flavor to the sauce.
  • Lemon Peel & Lemon Peel – adds a fresh citrus aroma with a refreshing summer taste.

Tips for Making it Super Creamy

Use less potatoes – which is the key to getting a super creamy texture without feeling cakey. Additionally, to let the corn’s flavor shine, you need to be careful with the amount added.

Reserve the pasta water – Pasta cooking liquid is gold, never throw it away. this helps make the sauce super thick and emulsifies it.

Be Generous – with parmesan cheese and lemon juice. These two are the key ingredients that make this pasta so addictive and refreshing without being too heavy.

Make it special – to make this pasta special, you can grill sweet corn over an open fire and add it to the top of the pasta. This adds a smoky flavor.

Cooking Corn

1)Heat olive oil in a frying pan. Add the garlic, spring onions, lemon zest and let them sizzle in the oil for a few seconds.

2)Now add fresh sweet corn to the oil. You can also use frozen sweet corn, but if you can get fresh corn, that’s best.

3)Mix the corn into the oil and cook over high heat until the color changes.

4)Stir for 5 to 6 minutes until the corn changes color slightly. You can see there are some colors in the corn which means taste.

5)Now pour ½ cup water, scrape the pan well to remove the burnt parts from the pan.

6) Cover and cook on low heat for 8 to 10 minutes until the corn is cooked.

7)Now add the Italian seasoning, salt, red chili flakes and mix into the corn.

8) Turn off the heat and let it cool slightly.

9)Turn off the heat, remove ¼ cup of corn mixture into a separate bowl which we will add at the end.

Cooking pasta

10) Meanwhile cook the pasta. Bring a large amount of water to a boil, add salt and pasta.

11) Cook according to package instructions.

Make corn dip

12)While the pasta is cooking, place the cooled corn into the blender jug.

13)add boiled potatoes, parmesan cheese and lemon juice.

14) Blend until it becomes thick. Add the pasta cooking water to help blend. It should be soft and smooth.

15) Your creamy sweet corn pasta sauce is ready.

Making Corn Paste

16)Now take the cooked pasta into the same pan where you sauteed the corn. Add corn sauce, remaining sautéed corn. The heat should be very low.

17) Pour in the pasta cooking liquid and stir well until it becomes soft and saucy. You can add more pasta water as needed.

18) Stir to combine. Heat just a little until everything is hot.

19) Serve immediately.

  • This recipe does not use cream or milk. So, you need pasta cooking liquid to emulsify the sauce. You can add more to make it soft.
  • I used spaghetti, you can use any pasta you like. If fresh corn is not available, you can use frozen corn.
  • Don’t add too many potatoes, or the sauce will be too thick.
  • Any herbs like basil, parsley can be added to the paste.
  • Sprinkle pasta with parmesan cheese before serving.
  • You can add more cooked sweet corn if you like a little corn in your pasta.

Serving & Storage

Corn pasta is best served hot immediately after making it. Because it contains potatoes, the sauce may become thick as it sits. If you’re serving it later, you can toss the pasta with the sauce just before serving. If your pasta becomes thick, you can add more pasta water to thin it out.
