Chicken Samosas are a popular snack recipe. It is a deep fried crispy triangular patti filled with spicy chicken filling. It makes a great snack and tastes just as good as my punjabi samosas with tomato sauce.

You just make the filling for the samosas and put them in and fry or bake them. Very easy. I have shared several samosa recipes on my blog.

  • Samosa Sheets: I used pre-made samosa sheets to hold the filling. This makes the process fast and easy.
  • All purpose flour: A little flour is mixed with water to form a smooth paste to cover the samosas. This helps the wrapper hold the filling together so nothing leaks out during frying.
  • Oil : Oil is used to sauté onions, chicken and ground spices. This helps the ingredients cook evenly and release their flavors. Any neutral cooking oil will work.
  • Onion : The onions form the base of the filling and add a light sweetness to balance the spices.
  • green chilies: Green chilies add a spicy taste that pairs well with chicken. Adjust the amount based on mild or medium spiciness.
  • Curry leaves: Curry leaves provide an authentic South Indian flavor that enhances the taste of the chicken stuffing.
  • Ginger garlic paste: Use freshly ground ginger garlic paste for a strong flavor. It soaks well into the chicken and balances the spices.
  • Chicken breast : I used chicken breast for the filling. It turns out soft, tender when cooked and absorbs spices well.
  • Spice powder: Turmeric powder, chili powder, and garam masala powder are the main flavoring spices that add flavor, color, and aroma to the filling.
  • Salt : Salt is used to balance the overall flavor of the filling.
  • All purpose flour: All-purpose flour is used to thicken the filling slightly and help absorb moisture from the chicken mixture.
  • Chicken broth : Chicken stock adds rich flavor to the filling.

Cooking Chicken

1)take the chicken breast in a high pressure cooker. Add salt, water and cover the stove. Pressure cook for 2 to 3 whistles. Let the steam escape by itself. Open the stove and remove the chicken. Leave it to cool.

2) Cut the chicken into small pieces. Set this aside.

Make the Filling

3) First make the filling. Heat oil in a pan, add onions, curry leaves and green chilies.

4) Add ginger garlic paste and sauté for a minute.

5) Add salt and turmeric powder, mix well.

6)Add chili powder, garam masala powder.

7) Saute the spices briefly.

8)Add wheat flour and sauté for 2 minutes.

9) Saute for a few minutes until fragrant.

10) Pour chicken stock or water over the flour.

11) Add the cooked diced chicken.

12) Stir well and cook until thickened.

Shaping the Samosas

13) Take patti samosa. Spoon the filling into the samosa patti.

14) Fold the samosa patti.

18) Mix flour with water to make a paste. It is used to glue the samosas together. Now fold it like a samosa and cover the edges with flour and water paste. now the samosas are sealed.

Fried samosas

21) Heat oil for frying. Put the samosas in hot oil, fry until golden brown.

22) Strain the samosas using a slotted spoon. Serve.

Expert Tips

Close the samosa tightly: Always make sure to seal the edges tightly with flour paste. This prevents oil from getting into the samosas while frying and keeps the filling intact.

Don’t overfill: Fill about 2 to 3 tablespoons of filling per samosa. Filling too much can crack the wrapper and make folding difficult.

Cool the filling: Always let the chicken mixture cool completely before wrapping. This prevents the cookie sheet from getting soggy when folded.

Air frying: For a lighter and healthier version, air fry these samosas instead of deep frying them. Brush the samosas with a little oil and fry. You’ll get the same golden crunch using less oil.

Storage : Arrange the wrapped chicken samosas in an airtight container and freeze for up to 1 month. You can pan fry or pan fry them straight from frozen. Samosas do not need to be defrosted.
