This has become one of my latest thirst quenchers in these hot summer days. Absolutely love it, it’s quite easy to make and once you preserve them you can keep them for 2 weeks in the fridge or more if you freeze them individually in ice cube trays.

Try using a little sour mango for this which has a sour taste that balances well with the sugar and spices. If your mango is not very sour, you can add additional lemon juice to it. You can even add some crushed mint leaves to it to add flavor. Check out my mango lassi.

Summer is the perfect time to enjoy cool and refreshing drinks and Aam ka panna is one of my favourites. This traditional Indian drink is made from raw mangoes, brown sugar, black salt, roasted cumin powder and fresh mint leaves.
You can prepare aam ka panna by boiling, steaming or pressure cooking raw mangoes. I cook the mango in a little water until soft, then cool it, peel it and take out the pulp.
The pulp is mixed with jaggery, roasted cumin powder and black salt to make a refreshing drink that can be enjoyed at any time.

Ingredients
- Raw mango: Raw mango is the main ingredient in aam ka panna. It gives the drink a sharp, sour taste and a refreshing taste. Use good quality raw mangoes from any variety of your choice to get a thick and creamy texture.
- black salt: Black salt is added to add flavor and balance the taste of the mango. It gives a mild salty, tangy taste and also aids digestion.
- Jaggery : Jaggery is a natural sweetener used to add a light sweetness to drinks and balance the sour taste of raw mango.
- Roasted cumin powder: Roasted cumin powder provides a warm, smoky aroma. It adds a slightly earthy flavor and makes the drink more flavorful and refreshing.
- Mint leaves: Mint leaves are added for freshness. This instantly provides a refreshing taste and makes the drink cooler.
- Ice cubes & ice water (optional): Ice cubes and ice water are used when serving. They make drinks cooler and more refreshing.

Step by Step Images
1) You need raw mango. Wash very well. There is no need to peel the skin of raw mango.

2)Cut and put into a pressure cooker. You can even add them whole to the pressure cooker.

3)Pour in enough water to cover the raw mango ¼ way.

4) Cover with the pressure cooker lid and pressure cook for 4 to 5 whistles until the raw mangoes are completely cooked.

5) Once the mango is cooked, allow it to cool completely before removing the flesh from the raw mango. Discard the skin.

6) Take the mango flesh. Add the remaining liquid from the stove while cooking the mango.

7) Blend until smooth.

8)Now add black salt.

9)Add sugar or jaggery according to taste.

10)Add roasted cumin powder.

11) Mix this very well. taste and adjust the sweetness and seasoning. This is your mango drink mix. Place this in the refrigerator to cool completely.

12)Pour the mango pulp into the pitcher.

13) Pour enough cold water and stir well.

14)Add a few sprigs of mint leaves. Chill this drink in the refrigerator for several hours to cool.

15) Enjoy this with lots of ice cubes.
