Aadi Koozh (Sweet Aadi Koozh) Recipe

Aadi koozh is a sweet tasting rice flour porridge made especially in the month of aadi. It is made with jaggery, coconut, rice flour, cardamom and dry ginger. This is my Amma recipe which is more sweet than savory.

This is a simple recipe made using jaggery and rice flour. But it feels amazing. It only takes less than 10 minutes to make. This is one of the best prasadham for amman. My grandmother used to make this for Amman and she said it was her favorite.

About Very Koozh

Aadi koozh is a traditional prasadham recipe made especially during the month of aadi. So many festivals and events happen in temples across South India during this month. This is one of the recipes made in many temples to be offered as prasadham.

There are two versions of aadi koozh made. One is a savory version made with rice, yeast flour, curd, onions, curry leaves and green chilies. This is a sweet version made by my Amma.

This one is similar to the Mambazha kaadi or Mango Payasam we make. But we don’t add mango in it. The porridge is made from rice flour, coconut, brown sugar, cardamom and dried ginger. It tastes sweet and aromatic.

In my hometown temple, they make and serve aadi koozh and aadi kozhukattai which is a tradition followed for many years.

Ingredients

  • Rice flour – This koozh or porridge recipe is made with rice flour. It is used as a thickener in cooking.
  • Jaggery – You can use jaggery or palm jaggery (karupatti) but I think jaggery is milder.
  • Coconut – Fresh grated coconut adds aroma and texture to the porridge.
  • Flavorings – Dry Ginger Powder and Cardamom powder are the flavorings used in koozh.

Step by Step Images

1) Start by making a rice flour paste. Take rice flour in a bowl. Add water to it and mix until it becomes a smooth paste. The mixture may be a little runny. Set aside.

2) Take grated jaggery in a sauce pan. Cover with water so that the jaggery is submerged in the water.

3) Place the sauce pan over medium heat and bring to a boil. Let the jaggery melt completely.

4) Once the jaggery is melted, strain it through a fine sieve. This removes any sediment from the jaggery.

5) Transfer the jaggery liquid back into the sauce pan. Add fresh grated coconut to the jaggery water. Allow it to boil.

6) After the mixture boils, add the rice flour paste and stir well.

7) Mix the rice flour paste into the jaggery liquid. Keep stirring and let it cook for 4 to 5 minutes. Rice flour must be perfectly cooked. The mixture will also become thick.

8) Add cardamom powder and dry ginger powder at this stage.

9) Mix the powder well. Turn off the heat. The longer the mixture simmers, the thicker it will be.

10)Let the koozh cool slightly and serve.
